2. Turn: Edit Mode.
3. Navigate to: GTA5\update\x64\dlcpacks\patchday3ng\dlc.rpf\x64\levels\gta5\vehicles.rpf\
4. If you want, you can make backup copy original file: zentorno.yft, zentorno.ytd, zentorno_hi.yft, zentorno+hi.ytd
5.Replace: zentorno.yft, zentorno.ytd, zentorno_hi.yft, zentorno+hi.ytd

You can turn on/off roof by enable/disable "extras" via any trainer:
